Chocolate zucchini muffins

Zucchini season is HERE.

If you’re thinking that you would never put zucchini in a baked good, it’s time to change your mind because these muffins are full of chocolate with zero zucchini taste. Probably one of my favorite muffins.

These muffins would be perfect for breakfast, an afternoon treat, or even dessert. Chocolate muffins get a healthy makeover! Made with whole wheat flour and no butter or refined sugars.

You will need:

  • 1 cup sheredded zucchini
  • 3/4 cup buckwheat flour
  • 1/2 cup coconut flour
  • 1/3 cup raw cacao powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup honey
  • 1/3 cup coconut oil
  • 2 teaspoon vanilla extract
  • 2 eggs
  • 3/4 cup buttermilk (or almond milk)
  • 4 ounces dark chocolate, chopped (more for topping if desired)

Directions:

Preheat oven to 200°C. Line 12 cup muffin tin with cupcake liners. Squeeze shredded zucchini of excess water with a paper towel. This is really important, so don’t forget to do it!

In a large bowl of an electric mixer, add coconut oil, honey, vanilla and egg. mix on medium-low In a medium bowl, whisk together the flour, cocoa powder, salt and baking soda. Add in zucchini and buttermilk; mix again. Slowly add in dry ingredients and chopped chocolate & mix until it smoothens.

Then divide the weigh into prepared liners. Bake 22-25 minutes or until a toothpick inserted into the middle comes out clean. After 5 minutes, remove muffins and transfer to a wire rack to finish cooling.

ČOKOLADNO-BUČKINI mufini

Čas bučk je pred vrati.

Če ste mislili, da nikoli ne bi dali bučk v slaščico, je čas da spremenite mnenje, saj so ti mafini polni čokolade in s skoraj nič okusa po bučkah.

Verjetno so eni mojih najljubših mafinov, saj so kot nalašč za zajtrk, popoldansko zdravo malico ali kot lahek desert.

Čokoladno-bučkini mafini so zdrava probrazba običajnih čokoladnih mafinov saj so iz polnoznate in kokosove moke, brez masla in rafiniranega sladkorja in po želji namesto navadnega mleka poskusite mandljevo mleko. Ne bo vam žal!

Potrebujete:

  • 300 g naribanih bučk (z vrta)
  • 280 g polnozrnate moke
  • 140 g kokosove moke
  • 90 g kakava v prahu
  • 1 čajna žlička sode bikarbone
  • 1 čajna žlička soli
  • 90 g medu
  • 90 g kokosovega olja
  • 2 čajni žlički vaniljeve arome
  • 2 jajci
  • 250 ml mleka (ali mandljevega mleka)
  • 150 g temne čokolade

Priprava: 

Pečico segrejemo na 200 stopinj. V pekač razporedimo papirnate modelčke. Zelo pomembno je, da naribane bučke stisnite s papirnato brisačo, da odteče odvečna voda. V veliki posodi z električnim mešalnikom premešamo kokosovo olje, med, vanilijevo aromo in jajci. Mešano na srednji hitrosti.

 V drugi srednje veliki posodi pa zmešamo skupaj presejeno moko, sodo bikarbono, sol in kakav v prahu. Dodamo v bučke in mleko. Narahlo pomešamo. Počasi dodajamo suhe sestavine. Na koncu dodamo se zdrobljeno temno čokolado.

Testo z žličko nadevamo v papirnate modelčke. Postavimo v pečico in pečemo 22-25 minut oziroma preverimo z zobotrebcem. Če zobotrebec ostane suh in čist so mafini pečeni. Po 5 minutah mafine damo iz pekača na mrežo, da se pohladijo do konca.
