Raspberry muffins with greek yogurt

Saturday I’ve spend a morning with my daughter in the garden.

We’ve picked a full bowl of red raspberries. Some raspberries we’ve ate just like that, the rest I’ve apply in delicious and juicy muffins whith raspberries and Greek yogurt.

Ingredients:

  • 1¾ cups white whole wheat flour or spelt flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine-grain sea salt
  • ⅓ cup melted coconut oil or extra-virgin olive oil
  • ½ cup honey or maple syrup
  • 2 eggs, preferably at room temperature
  • 1 cup plain Greek yogurt
  • 2 teaspoons vanilla extract
  • juice of 1 medium lemon (about ½ teaspoon)
  • 1½ cups garden raspberries or organic frozen resperries

Instructions:

Preheat the oven to 350 degrees Fahrenheit. In a large mixing bowl, combine the flour, baking powder, baking soda and salt. In a medium mixing bowl, combine the oil and honey or maple syrup. Add the eggs and beat well, then add the yogurt, vanilla and lemon zest. Mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 30 second bursts.) Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). Gently fold the raspberries into the batter. The mixture will be thick, but don’t worry.

Divide the batter evenly between the 12 muffin cups (I used an ice cream scoop with a wire level, which worked perfectly). Bake the muffins for 20 to 22 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean. Place the muffin tin on a cooling rack to cool.

Malinovi mafini z grškim jogurtom

V soboto dopoldan sva s hčerkico na domačem vrtu nabrale polno skledo rdečih malin.

Nekaj smo jih pojedle kar tako, ostale pa sem porabila za slaste in sočne mafine z malinami in grškim jogurtom.

Sestavine:

  • 280 g polnozrnate moke ali (140 g pirine in 140 g polnozrnate)
  • 3 žličke pecilnega praška
  • 1 žlički sode bikarbone
  • ščepec sol
  • 60 g javorjevega sirupa (ali 60 g medu)
  • 150 g malin z vrta (ali bio zamrznjene maline)
  • 2 jajci (sobna temperatura)
  • 250 g grškega jogurta
  • 5 kapljic vanileve arome
  • 90 g stopljenega in ohlajenega masla (jaz zelo rada uporabljam kokosovo maslo)
  • sok pol limone

Pečico segrejemo na 200 stopinj. V pekač namestimo papirnate modelčke. Za pripravo testa za mafine v veliko posodo presejemo moko, pecilni prašek, sodo bikarbono in sol. V posebni posodi narahlo razžvrkljamo jajca. Primešamo jim jogurt, maslo, limonin sok in vaniljevo aromo. Primešamo še javorjev sirup ali med. V sredino suhih sestavin naredimo vdolbino, vanjo vlijemo mešanico tekočih sestavin. Narahlo vmešamo maline.

Testo z žlico nadevamo v papirnate modelče. Pekač postavimo v pečico in pečemo okoli 20 minut, da mafini lepo narastejo in dobijo zlatorjavo barvo. Mafine pustimo 5 minut v pekaču, da se nekoliko ohladijo in jih postavimo na kuhinjsko rešetko, da se povsem ohladijo.
