Dessert for breakfast, or breakfast for dessert?
It’s definitely a glorious morning when you’re waking up to these. These hearty and simple morning glory muffins.
Ingredients:
- 100 g soft butter
- 100 g cottage cheese or fresh cheese
- 100 g cup brown sugar
- grated zest of 1 lemon
- 2 eggs
- 125 g flour
- 1 teaspoon of baking powder
- 1/2 teaspoon baking soda
For cream:
- 40 g cup soft butter
- 80 g cup cottage cheese or fresh cheese
- 100 g powdered sugar
Preheat oven to 350°F. In a large bowl, whisk the flour, baking soda, baking powder. In a medium bowl, whisk the eggs, brown sugar, butter, lemon zest, cottage cheese. Pour the wet ingredients into the dry ingredients, stir a few times. Scoop a heaping tablespoon of butter into each prepared muffin cup, adding just enough that the bottom of the muffin liner is covered. Bake for 20 to 25 minutes or until muffins do the test with a toothpick, taking care not to overbake. Remove muffins from pans and cool on a wire rack. When cooled garnish with cream.
Limonini mafini s skutno kremo
Mafini so pecivo, ki ga je mogoče spreminjati po svojem okusu in željah.
Jaz vedno uživam pri peki in okraševanju teh malih kolačkov.
Sestavine:
- 100 g mehkega masla
- 100 g polnomastne skute ali svežega sira
- 100 g rjavi sladkorja
- nastrgana lupinica 1 limone
- 2 jajci
- 125 g moke
- 1 čajna žlička pecilnega praška
- 1/2 čajna žlička sode bikarbone
Za kremo:
- 40 g mehkega masla
- 80 g polnomastne skute (ali svežega sira)
- 100 g presejanega sladkorja v prahu
- nastrgana lupinica 1/2 limone
Pečico segrejemo na 180ºC. Maslo kremasto zmešamo s skuto, sladkorjem, limonino lupinico in jajci. Moko, pecilni prašek in sodo bikarbono zmešamo, presejemo na mešanico iz masla in jajc ter na hitro vmešamo. Testo enakomerno porazdelimo v modelčke za mafine in pečemo približno 25 minut. Medtem pripravimo kremo. Vse sestavine dobro premešamo in za približno 10 minut postavimo v hladilnik. Na ohlajene mafine porazdelimo kremo.
