Blueberry Greek Yogurt Bars

Breakfast just got so much better.

Take everything you love about your favorite Greek yogurt and pack it into this bar for a perfect portable meal.

Ingredients

  • 2 cups rolled oats
  • 1 1/2 cup brown rice krispies
  • 1/4 cup shredded unsweetened coconut
  • 1/4 cup whole roasted almonds, chopped
  • 1 tablespoon chia seeds
  • 1/4 teaspoon salt
  • 1/2 cup almond butter
  • 1/2 cup honey
  • 1 1/2 teaspoon vanilla
  • 1 (rounded) cup fresh blueberries Greek Yogurt Coating
  • 1 tablespoon water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon gelatin
  • 1/4 cup greek yogurt
  • 1 tablespoon honey
  • pinch of salt
  • 2 cups powdered sugar

In a large bowl combine the oats, rice krispies, coconut, almonds, chia seeds and salt. Mix together. In a small microwave safe bowl combine the almond butter and honey. Add the vanilla and mix again. Add the honey mixture to the dry oat mixture and mix until everything is moist and combined. Gently stir in the blueberries. Press the mixture into the prepared pan and then using the back of a measuring cup press the mixture into the pan until it is tightly packed. Cover and place in the freezer for 1 hour.

Make the greek yogurt coating. Combine the water and vanilla in a small bowl. Make agar agar and whisk with a fork until the agar agar is evenly distributed.

In another small bowl, whisk together the yogurt, honey, and salt. Microwave on 15 second bursts, stirring in between each burst, until the yogurt is liquidy and very warm to the touch. Don’t let it start to boil or the yogurt will curdle. Whisk the gelatin into the warm yogurt mixture. Whisk until the gelatin is completely dissolved. Scrape the yogurt mixture into a medium mixing bowl. Pour the powdered sugar on top. Working with one bar at a time, dip the bottom of the bar into the yogurt and allow any excess to drip off. Let the bars sit, uncovered, until dry to the touch, about four hours or overnight.

Ploščice z borovnicami in grškim jogurtom

Zajtrk je pravkar postal veliko boljši.

Vaš najljubši grški jogurt lahko zapakirate v ploščice pa dobite popoln prenosni obrok.

Sestavine:

  • 150 g ovsenih košmičev
  • 100 g rjav puhast riž
  • 40 g praženih mandljev, zrezanih na koščke
  • 1 jedilno žlico chia semenščepec soli
  • 75 g mandljevega masla
  • 75 g medu
  • 1 in 1/2 čajna žlička vanilije
  • 150 g borovnic
  • Grški jogurt
  • 1 jedilna žlica vode
  • 1 čajna žlica vaniljevega ekstrakta
  • 1/2 čajne žlice agar agar
  • 40 g grškega jogurta
  • 1 jedilna žlica meduščepec soli
  • 200 g mletega sladkorja

V veliki posodi zmešamo skupaj ovsene kosmiče, puhasti riž, mandlje, chia semena in sol. V majhni posodi, ki jo lahko postavimo v mikrovalovno pečico, damo mandljevo maslo in med. Ko se to stopi dodajte še vanilijo. Mešanico medu in masla dodamo suhim sestavinam in dobro premešamo, dokler ni celotna zmes vlažna. Nežno vmešamo še borovnice. Stresemo na peki papir na pekaču in dobro pritisnemo zmes, ter postavimo v hladilnik za 1 uro.

Naredimo še preliv iz grškega jogurta. V manjši posodi združimo vodo in vanilijo. Pripravimo agar agar in ga dodamo vodi. V drugi posodi zmešamo skupaj jogurt, med in sol. Damo v mikrovalovno pečico tako da postane jogurt vroč, ne sme pa vret. V topel jogurt dodate zmes z agar agarjem in dobro premešajte. Na koncu dodate še mlet sladkor. Vsako ploščico posebej pomočite v jogurt in pustite da se posuši.
