Some raspberries we&#8217;ve ate just like that, the rest I&#8217;ve apply in delicious and juicy\u00a0muffins whith raspberries and Greek yogurt.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1\u00be cups white whole wheat flour or spelt flour<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li data-canvas-width=\"260.2248\">\u00bd teaspoon baking soda<\/li>\n<li data-canvas-width=\"320.91840000000013\">\u00bd teaspoon fine-grain sea salt<\/li>\n<li data-canvas-width=\"507.35520000000025\">\u2153 cup melted coconut oil or extra-virgin olive oil<\/li>\n<li>\u00bd cup honey or maple syrup<\/li>\n<li data-canvas-width=\"417.01440000000014\">2 eggs, preferably at room temperature<\/li>\n<li data-canvas-width=\"270.3096\">1 cup plain Greek yogurt<\/li>\n<li data-canvas-width=\"287.232\">2 teaspoons vanilla extract<\/li>\n<li data-canvas-width=\"475.70160000000016\">juice of 1 medium lemon (about \u00bd teaspoon)<\/li>\n<li data-canvas-width=\"592.3104\">1\u00bd cups garden raspberries or organic frozen resperries<\/li>\n<\/ul>\n<p data-canvas-width=\"124.60799999999999\"><strong>Instructions:<\/strong><\/p>\n<p data-canvas-width=\"468.9168000000002\">Preheat the oven to 350 degrees Fahrenheit.\u00a0In a large mixing bowl, combine the flour, baking powder, baking soda and salt.\u00a0In a medium mixing bowl, combine the oil and honey or maple syrup. Add the eggs and beat\u00a0well, then add the yogurt, vanilla and lemon zest. Mix well. (If the coconut oil solidifies in\u00a0contact with cold ingredients, gently warm the mixture in the microwave in 30 second\u00a0bursts.)\u00a0Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few\u00a0lumps are ok). Gently fold the raspberries into the batter.
