Pumpkin Soup with Coconut Milk

Healthy Healthy, satisfying, and perfect for chillier weather.

You guys are going to love this soup becaus it’s warm, creamy, pumpkiny, simple and perfectly spiced.

Ingredients:

  • 1 tablespoon coconut oil (or normal oil)
  • 2 shallots, diced
  • 3 cloves garlic, minced
  • 1/4 pumpkin (I like the hokaido one)
  • 2 cup (400 ml) coconut milk

 To a large saucepan over medium heat add 1 Tbsp oil and shallot add garlic (diced) and pumpkin, cuted in 2 centimeters large pieces. Add water (6dl) and bring to a simmer until soft. Add coconut milk , and bring to a boil again and simmer for few minutes.

Transfer soup mixture to a blender or use an emulsion blender to puree the soup. Pour into soup bowls and garnish with a splash of coconut milk, ginger and fried, shredded tortilia. If you like spicy, add chili.

BUČNA JUHA S KOKOSOVIM MLEKOM

Zdravo zdravo , izpolnjujejo , in kot nalašč za muhasto vreme.

Zaljubili se boste v njo, saj je topla , kremasta , bučna , preprosta in popolnoma začinjena.

Sestavine:

  • 1 žlica kokosovega masla (lahko uporabite tudi navadno)
  • 2 šalotki, narezani
  • 4 stroki česna
  • ¼ srednje velike buče (jaz uporabljam najraje bučo hokaido)
  • pločevinka kokosovega mleka (400 ml)

Na raztopljenem maslu počasi popražimo čebulo, dodamo nasekljan česen (jaz imam raje drobno nasekljanega) in bučo, narezano na približno kose velikosti dveh centimetrov. Vse skupaj še malo popražimo in zalijemo z vodo (približno 6 dl). Ko se buča zmehča prilijemo kokosovo mleko, še enkrat vse skupaj zavremo in še malo pokuhamo. Nato s paličnim mešalnikom mešamo do gladkosti.

Postrežem jo rada tako da dodam še malo kokosovega mleka povrhu, malo naribanega ingverja in popraženo na trakove narezano tortiljo. Če pa imate radi malo bolj pekoče, dodajte še grobo zmleti čili.
