Carrot & Walnut cake

Cakes and holidays have alweys been and alweys will be a perfect combination.

Cake:

  • 4 eggs
  • 170 g brown sugar
  • 2 dl olive oil
  • 5 carrots
  • 200 g full grain flour
  • 100 g spelt flour
  • ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • 1 teaspoon baking powder
  • ½ bicarbonate of soda
  • pinch salt
  • 150 g finely chopped walnuts

 

Frosting:

  • 100g butter at room temperature
  • 250 g cream cheese
  • 30 g minced sugar
  • zest of 1 orange

Sift together the flour, salt, cinnamon, ginger, baking powder and bicarbonate of soda. lightly beaten eggs and sugar. Add olive oil and ground carrots. Stir to combine. Add dry ingredients.

Pour the mixture into the cake tin and bake on the middle shelf of the oven for 40 minutes until golden at 180 degrees.

Leave the cake to cool completely. Make frosting: Using an electric mixer, beat cream cheese and lemon rind until smooth. Gradually beat in sugar until smooth. Spread frosting over cake. Decorate with walnuts. Serve.

Kolač s korenčkom in orehi

Pecivo in prazniki so vedno bili in vedno bodo idealna kombinacija.

Kolač:

  • 4 jajca
  • 170 g rjavega sladkorja
  • 2 dl oljčnega olja
  • 5 korenčkov
  • 200 g polnozrnate moke
  • 100 g pirine moke
  • ½ žličke cimeta
  • ½ žličke mletega ingverja
  • 1 žlička pecilnega praška
  • ½ žličke sode bikarbone
  • Ščepec soli
  • 150 g drobno narezanih orehov

 

Frosting:

  • 100 g masla sobne temperature
  • 250 g kremnega sira
  • 30 g mletega sladkorja
  • Lupinica 1 pomaranče

 

Polnozrnato in pirino moko zmešamo s soljo, cimetom, ingverjem, pecilnim praškom in sodo  bikarbono. Jajca penasto stepamo s sladkorjem. Prilijemo olje in dodamo fino naribane korenčke. Dobro pomešamo in dodamo suhe sestavine.

Zlijemo v pekač in pečemo pri 180  stopinjah približno 40 minut.

Kolač naj se ohladi in med tem pripravimo frosting. Nekaj minut stepamo maslo skupaj s kremnim sirom, dodamo sladkor in pomarančno lupinico. Premažemo popolnoma ohlajen kolač. Okrasimo z orehi in posrežemo.

Postrežen je na krožniku Vonj Narave.
