Perfect winter soup!
- 1 onion, chopped
- 3 clove garlic, crushed
- 6 carrot, washed and sliced
- 1 potatoes
- 1 apple, sliced
- juice of 1 orange
Heat the oil in a large pan, add the onion, carrots and garlic, apple and potatoes, sauté for 4mins, until they are beginning to soften but not colour.
Add the stock and bring to the boil, cover and simmer for 20mins or until the carrots are really tender.
Whizz the soup with a stick blender or transfer to a food processor. Add the orange juice and adjust the seasoning as necessary. Garnish with pistachios if liked.
